Quinoa & Red Pepper Tabbouleh

This amazing Mediterranean salad is an amazing lunch or a perfect way to add colour to your meals as an alternative to rice!

Ingredients

  • 1 Red Pepper

  • 1/2 Red Onion

  • 10g Fresh Parsley

  • Lemon

  • Pinch of Salt & Pepper

  • 100g Quinoa

  • Toasted Pumpkin Seeds

Method

  • Finely dice the red pepper, red onion and parsley and place into a bowl.

  • Slice your lemon in half and squeeze the juice over the pepper, onion and parsley .

  • Cook all the quinoa on a gentle simmer for 5 minutes whilst stirring.

  • Bring the quinoa off the heat and season with the salt and pepper.

  • Mix everything together and add more seasoning if you wish.

  • Finish by adding toasted pumpkin seeds.

This Tabbouleh can be enjoyed by itself or is a perfect accompaniment to any dish.
